Holiday Collection Boxes

During this holiday season, let's join together as Evansville's new premier community and show our support for the Tri-State Food Bank Backpack Program and the Vanderburgh Humane Society. There are 2 collection containers located in the Management Office. Starting today through December 22nd, please drop off your donations. For each item donated you will have a ticket entered for a drawing for $100 off your January rent. The more items you donate, the more chances you will have entered for the drawing. The drawing will be held on Wednesday, December 23rd. There is a list of items needed posted in the Management Office.

Quick and Easy Chocolate Chip Cookies!

This is a great recipe when you are in the mood to mix up a quick batch of chocolate chip cookies.

1 box Duncan Hines white cake mix
2 eggs
2 Tbls. water
1/2 cup oil
12 oz. pkg. chocolate chips

Mix all ingredients with mixer and stir in the chips. Bake on an ungreased cookie sheet for 10 minutes at 350 degrees. Cool and enjoy!

Cool Ways to Escape the Heat!

No matter what, you can dream up ways to escape the heat this summer on your own or with your whole family.

Some ideas:

Catch a reduced-price matinee movie during the daytime in an ice-cold movie theater.

Kick back at the library and read for hours — and while you’re there, check out all sorts of movies, books and music for free.

Check your local newspaper for listings of inexpensive or free arts and crafts shows, music festivals, art exhibits, theatrical productions, concerts and home tours taking place in air-conditioned venues.

Contact your local community center or your city or county pool and ask about free or low-cost programs and classes for yourself and your children.

Hang out in a roller-skating rink or ice-skating rink during the daytime. Even if you don’t feel like skating, you could bring a good book along and watch your kids, friends or relatives skate.

Instead of buying bottled water, pick up a reusable water bottle to take along with you. If you like filtered water you can buy a Brita Water Pitcher to keep cool, fresh water in your refrigerator. This will save you money and help save the environment from the plastic bottles.

Skip the bath and opt for a five-minute shower. A full bathtub can use as much as 50 to 70 gallons of water. If you still prefer to take baths, be sure to plug the drain immediately, adjust the water temperature as the tub fills, and turn off the water when the tub is only half full.

Memorial Day

Memorial Day and Labor Day are bookend holidays, marking the beginning and end of the summer holiday. These 3 day weekends traditionally are times for celebration and family outings. Memorial Day is a time to remember the U.S. men and women who lost their lives serving their country. Originally known as Decoration Day, it was established in 1868 to commemorate the dead from the Civil War. Over the years it came to serve as a day to remember all U.S. men and women killed or missing in action in all wars.

Try this tasty summer dessert!

Indiana Creamy Peach Pie Recipe

1-1/2 c. all purpose flour
1/2 teas. salt
1/2 c. butter
4 c. sliced fresh peaches
1 c. sugar
2-1/2 Tbls. all purpose flour
1 egg
1/4 teas. salt
1 teas. vanilla
1 c. sour cream
1/3 c. sugar
1/3 c. all purpose flour
1/4 c. butter

Preheat oven to 400. Combine flour and salt then cut in butter and press into 9" pie plate. Put peaches into a bowl and sprinkle with 1/4 cup sugar and set aside. In another bowl combine remaining sugar, flour, egg, salt and vanilla. Fold in sour cream then stir mixture into peaches. Pour into crust and bake 15 minutes then reduce heat to 350 and bake 20 minutes more. Prepare topping by combining all ingredients until crumbly. Sprinkle topping evenly on top and bake 10 minutes at 400. Enjoy!
